High in protein, vitamin D, and calcium.

Growth

Dry and warm. Deep roots.

Harvesting

Starting in spring and ending at the end of summer. Southern California begins cutting in March.  Central and Northern California starts to cut in April.

California, Arizona, Utah, southern Oregon.

Looks

Thinner stem with purple flowers indicates early cutting. Thicker stems with little to no purple flowers means later cutting. The earlier and greener the alfalfa is the more nutritional value it carries.
